A word about raw honey crystalizing

Almost   all   raw   honey   will   crystalize   in time.      This   does   not   mean   the   honey has   gone   “bad.”      Crystalized   honey   can be   liquified   again   if   bottles   are   exposed to   low   heat.      Care   should   be   taken   not to    expose    the    crystalized    honey    to temperatures        greater        than        100 degrees     as     this     will     decrease     the healthful    qualities    of    the    raw    honey.      How    long    will    honey    last?        Almost indefinitely.        Crystalized    honey    was discovered   in   the   pyramids   of   ancient Egypt   estimated   to   be   over   2,000   years old and it was still good. 

Raw local honey vs. “store bought”

Much   of   what   is   sold   in   the   stores   as honey        certainly        is        not        local.          Commercial        honey        is        generally pasteurized   at   high   heat   and   filtered   to take     out     pollen     and     many     other nutrients    that    are    only    found    in    raw local    honey.        The    pasteurization    of honey   at   such   high   heat   “kills”   much   of the   health   benefits   and   screening   out pollen     traces     further     reduces     the health    benefits    of    the    store    honey.      Much    of    the    commercial    honey    has been    adulterated    by    the    addition    of corn   syrup   so   as   to   make   the   “honey” less   expensive   for   the   consumer,   while taking      out      the      wonderful      health benefits of raw, local honey.
